Coconut Pecan Cake

The irony of this post is astounding.  Growing up, I hated coconut and therefore, hated this cake.  The recipe has been in my family for years starting with my wonderful Aunt Jean whose memory lives on in this cake and other wonderful recipes.  I’ve written before about my family of great bakers and she was one of them.  My palate has matured significantly and in addition to now loving coconut, I’ve grown to love other childhood food hates like tomatoes!

Sugar Cookies

I have an extraordinary amount of patience for cooking and baking. Technology not so much. Cooking and baking give me a sense of accomplishment and well-being that never EVER happens with technology which then becomes counter-intuitive and awkward. It always feels like I’ve met my match in some way, don’t know the secret password/handshake or someone is yelling, “put up yer dukes and fight!” That’s when I call in the Big Gun:  my very own personal IT department. I’m damn lucky.
